In a flat big tray wet salt is based on that complete cleaned chicken pasted with spices is fixed some chef also put raw rice inside chicken which cook with chicken fats and then whole chicken is covered by wet salt finally get a shape like knoll. whom chef tries to make by using his hands. which is then put into furnace for 1.5 to 2 hours.
when it is taken out from furnace. Salt become very hard just like a solid ball.
Which is then cracked by using hammer in front of the costumer (a very interesting time). Cooked chicken is taken out and served in separate tray. Don't think it to be very salty it just cook inside salt ball. Even sometime people use extra salt to taste during enjoying this food. Now in all famous restaurant of Turkey this recipe is cooked and served. Tourist in turkey love its serving style.
